Creepy Crawly Halloween Cupcakes

These fun and festive cupcakes are SUPER easy to make! They can be made with any flavor cake mix, and any white frosting (even pre-made from the store).

Ingredients:

  • 1 Box Cake Mix
  • 1 container white frosting
  • 1 bag M&Ms
  • 1 tube of brown or black decorating icing

1. Make 24 cupcakes using a box of cake mix (any flavor you wish).

2. After cupcakes cool, frost.

3. Use M&Ms and icing to create spiders, centipedes and other fun creatures for creepy crawly cupcakes!

Cake Balls

Any flavor cake mix and combination of frosting flavors can be used to make these cute, and ever so popular cake balls!

Ingredients

  • 1 (18.25 ounce) package chocolate cake mix
  • 1 (16 ounce) container prepared chocolate frosting
  • 1 (3 ounce) bar chocolate flavored confectioners coating

Directions

  1. Prepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.
  2. Melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
  3. Use a melon baller or small scoop to form balls of the chocolate cake mixture. Dip the balls in chocolate using a toothpick or fork to hold them. Place on waxed paper to set.

Easy Easter Cupcakes

1 package (18 1/4 ounces) white cake mix

1 container (16 ounces) vanilla frosting

Flaked coconut (about 1 cup for each desired color)

1. Prepare and bake cake mix as directed on package for cupcakes. Cool on wire racks. Frost cupcakes.

 

2. Place coconut in large resealable plastic bag. Squeeze food color into coconut (use 5 to 6 drops desired food color to 1 cup coconut). Shake until color is evenly distributed.

 

3. Sprinkle frosted cupcakes with tinted coconut. Decorate as desired with candies.

Easy Iced Lemon Cake

Ingredients

  • 1 (18.25 ounce) package lemon cake mix
  • 2 (14 ounce) cans sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 (12 ounce) container frozen whipped topping, thawed

Directions

  1. Bake the cake in 2 layers as directed on package. When cool, slice each layer in half horizontally, making 4 layers. In a medium bowl, combine the 2 cans of sweetened condensed milk with the fresh lemon juice. Reserve half of the mixture and set aside.
  2. Use half of lemon milk mixture to put between layers. With the reserved mixture, gently fold in the whipped topping, and use to frost the entire cake. Chill overnight before serving.

Ingredients

  • 12 ounces bittersweet chocolate, chopped
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract

Directions

In a medium saucepan over medium heat, combine chocolate and cream. Cook, stirring, until chocolate is melted and mixture is smooth. Remove from heat and whisk in flavoring. Pour into a small dish and refrigerate until set, but not hard, 1 1/2 to 2 hours. Use to fill candies or form balls and roll in toppings.

Easy Chocolate & Hazelnut Dessert Crepes

Ingredients

  • 1 cup chocolate hazelnut spread
  • 4 crepes (pre-made from grocery store)
  • 4 bananas, sliced
  • 1 (7 ounce) can pressurized whipped cream

Directions

  1. Spread 1/4 cup of chocolate hazelnut spread onto each crepe. Arrange 1 sliced banana down the center of each one. Roll up, and place in a warm skillet over medium heat. Let them warm up for about 90 seconds. Transfer to plates, and serve topped with whipped cream.

Creamy Tapioca Pudding

Preparation Time:  10 minutes
Cooking Time:  15 minutes

Ingredients

  • 3 cups whole milk
  • 1/2 cup quick-cooking tapioca
  • 1/2 cup white sugar
  • 1/4 teaspoon salt
  • 2 eggs, beaten
  • 1/2 teaspoon vanilla extract

Directions

  1. Stir together the milk, tapioca, sugar, and salt in a medium saucepan. Bring the mixture to a boil over medium heat, stirring constantly. Reduce heat to low; cook and stir 5 minutes longer.
  2. Whisk 1 cup of the hot milk mixture into the beaten eggs, 2 tablespoons at a time until incorporated. Stir the egg mixture back into the tapioca until well mixed. Bring the pudding to a gentle simmer over medium-low heat; cook and stir 2 minutes longer until the pudding becomes thick enough to evenly coat the back of a metal spoon. Remove from the heat and stir in the vanilla. The pudding may be served hot or poured into serving dishes and refrigerated several hours until cold.
